VEGGIE CHILLI

Ingredients
400g black beans
50g Eatlean Grated Original Cheese
1 tbsp garlic powder
2 tbsp ground cumin
2 tbsp smoked paprika
2 chopped tomatoes
3 tbsp tomato purée
2 sweet potatoes
1 onion
2 carrots
2 celery sticks
1-2 tbsp chilli powder
Method
Wash the potatoes and lightly scrub before placing into the air fryer and lightly drizzling oil over. Cook for 45 minutes at 200 degrees celsius.
Add the chopped onion, carrot and celery into the pan on medium heat before seasoning with spices. Cook until soft and then add in the tomato purée.
Once cooked, add chopped tomatoes and 200ml of water and leave to simmer before adding in the sweet potato chunks.
Leave to simmer for 5 minutes, serve with rice and sprinkle on eatlean cheese as desired.
