BUTTER BEAN, MUSHROOM & CHEESE POT PIE

 

Welcome to a delightful and comforting end-of-week meal: Butter Bean, Mushroom, and Eatlean Original Cheese Pot Pies! This veggie-friendly dish is perfect for those cosy evenings when you crave something warm. Packed with mushrooms, creamy butter beans, and gooey cheese, these pot pies are sure to become a favourite in your household.

 

Ingredients

1 Onion

100g Eatlean Grated Original Cheese

200g Kale

500ml Vegetable stock

2 tbsp Plain flour

1 Can of Butter beans

300g Mushroom

Method

Diced the onion and fry on a medium heat until golden brown. As the onion is frying, cut the mushrooms and add to the pan after 5 minutes.

Add plain flour and vegetable stock to the pan before adding in the kale. Allow to simmer for 3-5 minutes or until the kale had softened.

Rinse and mash the butter beans before layering into a small pot dish with the vegetable mix first.

Sprinkle with Eatlean Grated Cheese and cook in the oven for 20 minutes at 180 degrees celsius.
