TEX-MEX CHEESE ON TOAST
Next in the Protein Series a protein-packed Tex-Mex Cheese On Toast recipe. Make’s for a tasty lunch, this recipe when using Eatlean Protein Cheese contains a whopping 26.5g of protein per slice!
1 medium egg
150g Eatlean cheese, hand grated (protein = 54g!)
1/2 red onion, finely chopped
1/2 chilli, finely chopped
Handful of coriander
2 slices of bread, toasted
400g black beans
Hot sauce for serving
Mix Eatlean Cheese, onion, chilli, egg, black beans and ¾ of the coriander in a bowl.
Spread the mixture onto toasted bread and cook in the oven at 180 degree celsius until the cheese is bubbling.
Mix the avocado with the rest of the coriander, lime juice and spread on top of the cheesy toast.
Top with hot sauce and enjoy!
