MINI STUFFED PEPPER PUMPKINS

Ingredients
3 Orange bell peppers
500g Lean minced meat
1 Can of tinned tomatoes
1/2 Onion
Method
Cook on medium heat minced meat for 10 minutes before adding tinned tomatoes and onion.
Cut the top off the bell peppers and scrape out the inside to remove the seeds. Cut out a face with a small knife.
Add minced meat mixture and some extra Eatlean Grated Cheese on top before placing in the oven for 5-8 minutes on a medium heat to melt the cheese.
