LUNCHTIME CHEESY TACO BOWL
Taco bowls are a healthy and colourful way to spice up your lunch time! Using fresh ingredients for full flavour and packed full of protein to keep you fuller for longer
Recipe serves 2. For a meat free option, substitute minced meat for rice or tofu.
Ingredients
80g Eatlean Original Grated cheese
200g Low fat beef mince
2 Sweet potatoes
1 tsp salt
1 tsp black pepper
1 tbsp olive oil
200g passata
4 large tomatoes
1 avocado
1 tsp chilli flakes
¼ lime
Method
Cut 2 sweet potatoes into smaller circular pieces, drizzle with a small amount of olive oil and season with salt and black pepper.
Air fry the sweet potato circles for 20 minutes at 200 degrees celsius.
Fry 200g of the beef mince and add seasoning of choice.
Mix in 200g passata.
Prepare 2 large tomatoes, sliced 4 times.
Mash avocado and season with black pepper and chilli flakes.
To a bowl add sweet potatoes, minced meat, sliced tomatoes, Eatlean Original Grated cheese and avocado.
Top with fresh basil and lime.
