LOW FAT CAULIFLOWER CHEESE

It’s a household favourite, so we thought we’d have a go at mixing things up, loading up our Cauliflower Cheese with extra flavour, whilst dropping the fat, calorie and carb content right down so that you can enjoy this favourite more often! A serving of this Low Fat Cauliflower Cheese dish contains just 8.3g of fat, but over a whopping 40g of protein! The salty bacon, and tangy spring onions really compliment the cheese sauce and we promise you that you won’t be disappointed with this healthy twist on a household favourite.

So what have we switched up…

Eatlean Grated – For all the flavour, without all the high fat, high calorie content we use our Grated Protein Cheese for gooey melted cheese greatness! Low in fat, low in carbs, low in calories and high in protein, you can sprinkle this all over your dish.

Lean Bacon Medallions – Many supermarkets or butchers can offer a leaner cut of bacon, with the fat removed, so we opted for this. Zero compromise on flavour, yet a great lower fat alternative.

Skimmed Milk – Skimmed Milk typically contains around 0.1% fat so its a great alternative to the higher fat Whole Milk that can often be found in cheese sauces

Ingredients

1 Head of Cauliflower

3 Lean Bacon Medallions

1 TBSP Wholegrain Mustard

75ml Skimmed Milk

2 Spring Onions

Method

In a bowl combine 2 tubs of Spreadable Protein Cheese with 1 tbsp of Wholegrain Mustard

Measure 75ml of Skimmed Milk, add half and stir in until combined, and then add the second half of the milk and mix thoroughly.

Take one head of cauliflower and steam it, then add to an ovenproof dish.

Cook three medallions of chopped lean bacon, and chop up three spring onions. Add half of each to the cauliflower dish.

Top with the sauce, and add 50g of Grated Protein Cheese, then bake in the oven at 200 degrees, for 25 minutes.

When it is ready and the cheese has gone lovely and golden brown, top with the remaining bacon and spring onions, and serve!
