HIGH PROTEIN, LOW FAT BONFIRE BAKED POTATOES
If you are looking for a simple high protein, low fat side dish to add to your Bonfire night buffet then we have the perfect one for you!
Just 4 ingredients (half of them being of the Eatlean variety of course!) will make you these delicious Bonfire Baked Potatoes.
So quick and easy to prepare and only half an hour in the oven whilst you play around with sparklers (carefully!) and watch the Bonfire burn brightly!
At only 6g of fat per potato skin and 16g of protein, these jackets will fill you up and keep you all warm inside for a good while whilst you “OOOH” and “AHHH” over those beautiful fireworks.
4 half baked potatoes
1 potato skin
2 Baking Potatoes
100g Eatlean Spreadable
50g Eatlean Grated
75g Bacon Medallions
Skewer and season the potatoes, rubbing the seasoning into the skin, then pop into the oven and bake until cooked through
Halve the potatoes and scoop out the potato mixture then mash together well with a fork
Spoon in the Eatlean Spreadable and add the Eatlean Grated and then mix together well
Finally add the cooked bacon bits and spoon the mixture back into the four half potato cases
Season and pop into the oven to cook through for another 20-30 mins until melted and crisped on top
