CHEESY BAKED TACO BOWL
Ingredients

400g Low fat beef mince

150g Eatlean Grated Original Cheese
✓
1tbsp tomato puree
✓
Taco seasoning
✓
Coriander
✓
Light oil spray
✓
Spring onions
✓
Seasoning of choice (salt, pepper, garlic, cumin and paprika)
✓
1 Lime
✓
250g Black beans
✓
1/2 Yellow / orange bell pepper
✓
1 Red onion
✓
2 Large tomatoes
✓
2 Tortilla wraps
✓
Chipotle sauce (optional)
Method

Take an oven proof bowl, and your flour taco, spray the taco with the cooking oil spray and push into the bowl, letting the taco take the shape of the bowl.

Transfer the bowl to the oven for 10 mins until slightly browned and crisped.

Add the lean minced beef and diced red onion to a frying pan on a medium heat until brown.

While the minced beef is cooking, prepare the vegetables (tomato’s, spring onion and bell peppers) by dicing into small cubes. Then season along with the black beans with salt, pepper, garlic, cumin, paprika and a dash of lime.

Once the minced meat is cooked, then season with the taco mix and tomato puree and sprinkle in Eatlean cheese and melt through.

Then take the bowl and assemble the cheesy mince on one side, with the veggies assembled side by side.
