MINI EGG CHEESECAKE

It’s dessert time! Not only does Eatlean Spreadable make yummy savoury meals, it’s also a perfect ingredient to sweet dishes too.

This perfect for Easter, Mini-Egg  Cheesecake, will be an all round family pleaser over the Easter weekend.

Switching a soft or cream cheese for Eatlean Spreadable allows you to cut down calories in sweet treats all while adding some extra protein.

Ingredients

150g Digestive Biscuits

50g light unsalted butter, melted

100g icing sugar

75g Mini Eggs

30g Double Cream

Method

Crush digestives or add to a food processor / blender and mix with melted butter. Press into a cake tin.

Beat Eatlean Spreadable with the icing sugar, 2 drops of Eatlean Vanilla Flavour Drops and double cream. Spoon the mixture over the digestive biscuit base and smooth the surface with spatula. Chill overnight.

Carefully release the cheesecake from the tin and top with Mini Eggs to decorate.
