Ingredients

3 eggs

1 large tomatos

1/2 red pepper

1 shallot
-
1/2 tsp chilli paste (more to taste)

3 garlic cloves

1/4 tsp ground turmeric

1/2 tsp cumin seeds

1 Warburtons thin protein bagel

30g eatlean chilli cheese
-
corriander to garnish
Directions
Finely chop your shallot, tomato, pepper and mince your garlic cloves.
Add cumin seeds to a drizzle of warm olive oil along with chilli paste and toast for 2 minutes on a low heat, stirring to avoid burning.
Add shallot and garlic to the pan and cook for 2-3 minutes until softened.
Mix in turmeric before adding tomatoes and pepper to the pan. Cook well for 5 minutes until fragrant and softened.
Next add your beaten eggs and cook an a low heat, allowing the eggs to soak up the flavour of spices. Half way through add 30g of Eatlean Chilli Grated Cheese and continue to stir gently until eggs are cooked through.
Serve on toasted protein bagels with a generous handful of chopped coriander.
