Butter Bean, Mushroom & Cheese Pot Pie

This veggie-friendly dish will see you through the colder evenings - packed with mushrooms, creamy butter beans, and gooey cheese, these protein pot pies are a great quick dinner you can prep in advance.
Ingredients

1 Onion

100g Eatlean Grated Original Cheese

200g Kale
-
500ml Vegetable stock

2 tbsp Plain flour

1 Can of Butter beans

300g Mushroom
Directions
Diced the onion and fry on a medium heat until golden brown. As the onion is frying, cut the mushrooms and add to the pan after 5 minutes.
Add plain flour and vegetable stock to the pan before adding in the kale. Allow to simmer for 3-5 minutes or until the kale had softened.
Rinse and mash the butter beans before layering into a small pot dish with the vegetable mix first.
Sprinkle with Eatlean Grated Cheese and cook in the oven for 20 minutes at 180 degrees celsius.
Recipe Note
Boost the protein metrics with shredded chicken or tuna.
