SUPER GREEN PESTO PROTEIN PASTA WITH CHICKEN SAUSAGES

Super Green Pesto Protein Pasta with Chicken Sausages

 

Looking for an indulgent pasta dish for dinner that’s packed with nutrients? This delicious super green pasta dish hits hard on the vegetables and protein but is super easy to make!

SERVES 2

 

Ingredients 

½ onion (diced)

2 large garlic cloves (minced)

½ tsp chilli flakes

2 tbsp olive oil

3 protein chicken sausages

8 spears asparagus (cut in 1 inch pieces)

4 pieces of tender stem broccoli (cut into thin slices)

160g frozen peas

1 handful of spinach

95g reduced fat pesto

150g rigatoni pasta

1 cup hot pasta water

Method

Cook pasta till al dente in salted boiling water, reserve a cup of pasta water before draining.

Sweat onion, chillis and garlic.

Add your chicken sausages, breaking them apart in the pan and cooking until they start to brown.

Add in a splash of pasta water then add in asparagus and broccoli. Cover and cook for 5 minutes.

Once greens have softened toss in peas and spinach, sauté for two minutes.

Add in pesto and cooked pasta, toss to combine.

Add in some pasta water to preference. Then incorporate most of the cheese, leaving some for serving.

Season with salt and cracked pepper. Toss again. Serve immediately in a bowl with extra cheese!
