PROTEIN-PACKED CHEESY BLACK BEAN BAKE recipe using eatlean cheese

We recently teamed up with @olsfood and Whitworths to bring you this sensational pan of high protein cheesy black bean goodness! This is low fat and high protein meal, as well as being extremely tasty.

 

Ingredients

1 tbsp olive oil

1 large onion (finely chopped)

2 cloves of garlic (peeled and finely grated)

Handful of chopped peppers

1 tbsp smoked paprika

1 tsp ground cumin

1 tbsp tomato puree

250ml water

Method

Preheat your oven to 180c.

Heat the olive oil in a large non-stick casserole dish over a medium heat and gently fry the onion with a pinch of salt for 5-6 minutes until softened.

Add the garlic and fry for a further 2 minutes.

Add the smoked paprika and cumin and fry for 1 minute, stirring.

Stir in the tomato purée then add the pouches of beans and stir to combine.

Add the water and allow to bubble away over a gentle heat for 10 mins until thickened. You may want to add a splash more water.

Top with Eatlean grated protein cheese, then bake in the oven until the cheese has melted. Serve with nachos or your favourite dunker!
