PROTEIN-PACKED CHEESY BLACK BEAN BAKE
1 tbsp olive oil
1 large onion (finely chopped)
2 cloves of garlic (peeled and finely grated)
Handful of chopped peppers
1 tbsp smoked paprika
1 tsp ground cumin
1 tbsp tomato puree
2x pouches of Whitworths Protein by Nature Brazilian Smoky Beans
Preheat your oven to 180c.
Heat the olive oil in a large non-stick casserole dish over a medium heat and gently fry the onion with a pinch of salt for 5-6 minutes until softened.
Add the garlic and fry for a further 2 minutes.
Add the smoked paprika and cumin and fry for 1 minute, stirring.
Stir in the tomato purée then add the pouches of beans and stir to combine.
Add the water and allow to bubble away over a gentle heat for 10 mins until thickened. You may want to add a splash more water.
Top with Eatlean grated protein cheese, then bake in the oven until the cheese has melted. Serve with nachos or your favourite dunker!
