PROTEIN OMELETTE WRAP
Nothing makes us happier than when our Eatleaners come up with delicious recipes using Eatlean cheese.
And this one from Emily Scott is perfect for a high protein, healthy, cheesy brekkie!
A protein omelette wrap will keep you fuller for longer and satisfy those taste buds to high heaven! Using Eatlean newly launched Tasty Grated Mature Cheese for 70% less fat (than standard cheese).

2 large eggs
80g wilted spinach
1 cooked rasher of bacon
1 tsp chipotle mayo
Salt & Pepper
Whisk 2 large eggs with a pinch each of salt & pepper.
Heat a large, non-stick frying pan with a little oil/spray over a medium heat.
Pour in the egg mixture then cook for around 2 minutes. Once the egg has started to set, carefully flip and cook for a further minute.
Remove the omelette from the pan then place on a chopping board. Cut a slice from the centre of the omelette to the base.
Add fillings of your choice to the four quadrants – I went for 80g wilted spinach, 1 cooked rasher of bacon, 30g Eatlean Tasty mature grated cheese & a spoonful of chipotle mayo.
Carefully fold each quadrant over so that it forms a pocket.
Place the wrap back in the frying pan and cook for a further 1-2 mins on each side or until the exterior is starting to crisp up & the Eatlean cheese has melted. Enjoy!
