HOMEMADE CHEESY SWEET JACKET AND CANNELLINI BEANS

INGREDIENTS
1x Red Onion
2 x Carrots
3 x Garlic Cloves
2 x Tins of Cannellini Beans (400g per tin), dried
1 tsp Cumin Seeds
2 tsp Smoked Paprika
700ml Passata
100ml No Added Salt & Sugar Tomato Ketchup
4 Large Sweet Potatoes
METHOD
Peel the carrots and finely chop along with the onion and garlic.
Wash the sweet potatoes and pierce them before placing on a baking tray and into the oven at 180°C.
Add the carrots, onions and garlic to a pan with a drizzle of olive oil and cook on a medium heat for about 15 minutes until softened but not coloured.
Add the cumin and paprika and cook for another 5 minutes.
Add the drained beans, passata and ketchup and stir well.
Allow the beans to simmer on a low heat for about 20 minutes before adding half the grated Eatlean Tasty Mature Cheese.
Stir the cheese through the beans until melted.
By now the sweet potatoes should be cooked (depending on their size) but if not the beans can simply be kept warm until the sweet potatoes are cooked through.
Cut open the sweet potatoes and spoon over the beans followed by the rest of the grated Eatlean Tasty Mature cheese. Then simply tuck in!
