EASY CHEESY SHAKSHUKA

 

 

 

Ingredients

4 medium eggs

1 avocado

400g tomatoes

1 red onion

1 tin of chickpeas

1 red pepper

1 yellow pepper

2 gloves of garlic

2 tsp of paprika

Bunch of watercress

100g Eatlean Grated Cheese

Method

Prepare vegetables. Peel onions and finely chop tomatoes, peppers and onions. Fry on a medium heat for 10 minutes until the vegetables are soft.

Peel and chop garlic and add paprika. Then simmer for a further 1 minute.

Add chickpeas and 100ml of water, then leave to bubble for 2 minutes. Lower the heat to simmer and leave to cook uncovered for 10 – 12 minutes.

Make 4 indentations in the pan and crack 1 egg into each one. Cover with lid and cook on a medium heat for 10 minutes or until the eggs are cooked.

Uncover and scatter with washed watercress, sliced avocado and Eatlean Grated Cheese.
