CHICKEN FAJITA TORTILLA BOWL
Lunchtime is hotting up at Eatlean with Chicken Fajita Wrap Bowls. Made with Mission Wraps UK Protein Wraps, Florette Crispy Mixed Salad leaves and our Eatlean Chilli Cheese. These wrap bowls are easy to make, packed with spicy fajita veggies and an impressive 40g of protein per bowl.
Ingredients
Mission Foods Protein Wrap
Light oil spray
125g Rice
80g Chicken breast fillets pieces
1 tbsp Fajita seasoning
1 – 2 mixed peppers, sliced
½ Onion, sliced
Tbsp Chargrilled or tinned sweetcorn
Florette Crispy Mixed Salad
30g Eatlean Chilli Cheese
Sliced chilli (optional)
Method
Take an oven proof bowl, and your Mission Food Protein Wrap, spray the wrap with the cooking oil spray and push into the bowl, letting the taco take the shape of the bowl.
Put the rice on to cook per pack instructions
Transfer the bowl to the oven for 10 mins until slightly browned and crisped.
Meanwhile warm some oil in a pan and once hot, cook your chicken pieces in fajita seasoning on a high heat until cooked through
Once the chicken is cooked, remove into a bowl and in the same pan lightly fry the mixed peppers and onion until softened along with sweetcorn until golden.
Then take the bowl and assemble the rice and salad as a base.
Top with spicy chicken, vegetables and eatlean cheese – enjoy!
