CHEESY TURKEY PARMIGIANA

For the dinner option in our Protein Series, this yummy cheesy tomato turkey parmigiana. Made using a mix of Eatlean Cheese and Eatlean Spreadable Cheese for a double whammy of cheesy flavour. Contains 36.1g of protein! Serves 2.

Ingredients

140g skinless turkey breast

Salt and pepper

Light oil spray

100g Eatlean Grated Cheese

50g Eatlean Spreadable Cheese

1 clove garlic, peeled and finely chopped

4 tbsp tomato purée

150g tinned chopped tomatoes

Pinch of dried oregano

1 1/2 tsp red wine vinegar

Green salad to serve

Method

Add light oil spray to a pan on medium heat, season turkey with salt and pepper then lightly fry the seasoned turkey until it is golden and cooked through.

Set aside turkey and in the pan, add the garlic, tomato purée, chopped tomatoes, vinegar and oregano. Allow to simmer for 2 minutes.

Mix the avocado with the rest of the coriander, lime juice and spread on top of the cheesy toast.

Add half of the tomato sauce into a roasting dish, lay the turkey on top and add the remaining sauce. Top with Eatlean Spreadable and Eatlean Grated cheese and cook under the grill for 3-4 minutes until the cheese is melted and gooey. Serve with a green salad.
