CHEESY BACON & SWEET POTATO HASH

This dish serves two, so perfect for you and your gym buddy to enjoy post-workout.

Ingredients
300g Sweet Potato (peeled and chopped)
6 Slices of Turkey Bacon (cut up)
2 Eggs
200g Mushrooms (sliced)
1 Red Onion (chopped)
1 tbsp Olive Oil
1 tsp Paprika
200g Frozen Peppers
Method
Prepare your ingredients.
Add olive oil to a pan over a medium heat, add onion and let soften for a few mins.
Add sweet potato to pan with onion and let cook for about 8 mins.
Add mushrooms and peppers to pan and cook for about 3-4 mins.
Add paprika and turkey bacon to pan, let cook for a few mins.
Create two little pockets in the mix where you can crack your egg into – crack your eggs in, sprinkle your Eatlean Protein Cheese on top and place a lid on the pan, cook for about 5-7 mins. Serve and Enjoy!
