Cheesy frittata recipe using Eatlean protein cheese

Coming to you from our first ever Eatlean Kitchen Live episode …..

We have some amazing feedback after our first Eatlean Kitchen Live on Instagram and plenty of demand for the frittata recipe we showed you.

So here it is…..protein rich and only 5.8g of fat per frittata.  So easy to make (if we can make it, whilst live on air, then you certainly can!) and deliciously tasty using Eatlean Tasty Mature Cheese.

Of course you can switch the ingredients around and use whatever you like, but don’t you dare switch the cheese!  He he! 😉

Ingredients

2 tsp olive oil, plus a little extra for greasing

1 garlic clove, crushed and chopped

½ large courgette, grated

Handful of chopped peppers

30g frozen peas

4 large eggs, beaten

Method

Prepare the ingredients: Chop up the garlic, peppers and grate the courgette, then weigh out your peas.

Gently cook up the garlic, peppers, courgette and peas on a medium heat in a small amount of low calorie spray for approx. 5 minutes.  Set aside to cool.

Meanwhile, whisk up the 4 eggs and season with salt and pepper if required

Grated the Eatlean Tasty Mature Cheese and add it to the egg mixture.

Add the cooked garlic, peppers, courgette and peas to the seasoned egg and mix well.

Pour the mixture evenly into the muffin tray (This recipe will make 6 muffins).

Cook at 180 degrees Celsius for 19 minutes and enjoy!
