KETO RASPBERRY CRUMBLE MUFFINS

    Ingredients

    • 300g Eatlean SKYR - Strawberry & Raspberry
    • 350g Almond Flour
    • 50g Low Fat Margarine
    • 2 TSP Baking Powder
    • 100g Raspberries
    • Eatlean Raspberry Flavour Drops
    • 2TBSP Eatlean Maple Syrup
    • 50g Eatlean Spreadable

    Method

    1

    Add the flour, margarine, SKYR, baking powder, raspberry drops and maple syrup then mix together well

    Crumble in half of the fresh raspberries and stir through

    Spoon the mixture into muffin cases and pop into the oven, baking for 25 mins or until golden

    Allow the muffins to cool, and whilst they do, prep the icing

    In a bowl mix the spreadable, syrup and Raspberry Flavour Drops along with a few fresh raspberries, then mix together well

    Spoon onto each of the cooled muffins and finish with a fresh raspberry
